Today is our second wedding anniversary! So as a treat to you guys I’m sharing our favourite ever cake recipe with you. As you know, I cook with pumpkin pretty often, but this Pumpkin Cake is really the Best. Thing. Ever!
This cake has all the best spices, it’s incredibly moist because you use sunflower oil and no butter, and with the cream cheese frosting it’s just perfect. I love trying new recipes, but I keep coming back to this one every single time, nothing can beat it!
I don’t know what it is exactly does the trick with this recipe, I think it’s just the combination of flavours with the mouthfeel (gross word but true!). When I make this cake, even people who are on a diet take 2 servings.
If you don’t like cream cheese or you’re lactose intolerant you can just skip it, I can tell you the cake is great without it too! How do I know? I thought I got everything I needed from the supermarket and once I was back home I found out I forgot the cream cheese!
