Ever since I started ordering my groceries online, I sometimes order to much of a thing. This was the second time I ordered way to many bananas, so I decided to make a twist on a banana bread: a nutty Carrot Banana Bread, and it’s DELICIOUS!
So, what is a Nutty Carrot Banana Bread? It’s kind of a combination between Carrot Cake and Banana Bread with tons of nuts. Like really, really a lot of nuts.
Now, this recipe called for mayonnaise.. I know it’s weird, but like she says: “It is really just eggs and oil”. And since I didn’t have any mayonnaise at home, I used one extra egg and 1/4 cup of vegetable oil.
I also added a lot of extra nuts. I used walnuts, hazelnuts, cashews and almonds, all roughly chopped and it gives amazing texture to this Banana Bread, so use as much as you like!
This recipe was the first recipe I made while using actual measuring cups and spoon I got for my birthday and it made cooking SO much easier! If you love baking and use English/American recipes often: please buy yourself measuring cups! I really wish I’d gotten them earlier.
