When thinking of stews a lot of people automatically think about meat, but that doesn’t have to be the case! This vegan Mushroom & red wine stew with carrots is the perfect, hearty stew for a stormy Autumn evening.
This amazing stew contains onions, mushrooms, carrots, red wine, parsley and I also added boiled chestnuts in the last 5 minutes. I love chestnuts in my Autumn dishes and they went great with the rest of the flavours!
We made creamy mashed potatoes to go with the other flavours in this stew, but it would also go great with rice or quinoa. It’s definitely one of my favourite recipes to make each fall.
