When thinking of stews a lot of people automatically think about meat, but that doesn’t have to be the case! This vegan stew with mushrooms, carrots and red wine is the perfect, hearty stew for a stormy Autumn evening.
This amazing stew contains onions, mushrooms, carrots, red wine, parsley and I also added boiled chestnuts in the last 5 minutes. I love chestnuts in my Autumn dishes and they went great with the rest of the flavours!
We made creamy mashed potatoes to go with the Mushroom & Red Wine Stew, but it would also go great with rice or quinoa. It’s definitely one of my favourite recipes to make each fall.
